My kids are so excited for the warmer weather because this means comfortable bike rides to and from school. We are also adjusting to the major time change this week. Let’s just say it has been a hard adjustment. How has it been for you?
Our family is giddy for this spring season for so many wondrous reasons: the warm weather, brighter days, flowers blooming, etc,. But, nothing beats welcoming spring with open arms than celebrating Easter as family! We honor this day by attending our church services in the morning and then have a special family Easter dinner at home.
I love engaging with the girls by getting their input on our Easter menu. They reminded me how much my husband Albert loves olives! I love creating entrees, appetizers, and snacks he and the kids both enjoy. This Easter I am inspired to create an Easter appetizer featuring delectable olives! My friends at Pearls® Specialties has the best green olives out there! They are so good and make for the perfect premium snack right out of the bottle.
Albert is an olive snob, so I must only use the best green olives! I love that Pearls Specialties is a brand that is family owned has been around for over 75 years. I think it is fabulous that this family brand partners with local farmers in Greece to bring the finest olives to us. I know the holidays can get hectic and Easter is no different with family, friends, community, school, and church activities and events. So, I am going to give you a hand by sharing with you an easy Easter appetizer using Pearls Specialties that you can prepare in just minutes! My watermelon, feta, and green olive recipe is the perfect easy Easter appetizer for your Easter party or any major noshing session.
Pearls Specialties olives are absolutely delicious and I love that you don’t have to spend a lot of money to add a refined touch to your menu. This easy Easter appetizer was simple to put together that my girls could help without supervision. I love spending time in my Ugly Kitchen and it is even more enjoyable with my family around and with great food like Pearls!
For our easy Easter recipe, we have decided on using Pearls® Pitted Kalamata to create this refreshing and delectable watermelon, feta, and green olive appetizer. Okay, my friend it is time for a recipe share and I think you are going to love this one!

Watermelon, Feta, and Green Olive Appetizer
Ingredients:
- 2 cups of watermelon, cut into 1 inch cubes
- 6 oz of Pearls® Specialties pitted kalamata olives
- 4 oz of Greek feta cheese, cut into 1 inch cubes
- Balsamic vinegar, my favorite here
- Toothpicks, I prefer the decorative ones because they are longer
- Sprigs of mint leaves
Directions:
Slide one Pearls Specialties kalamata olive onto each skewer, next add a cube of watermelon, and followed by a cube of feta cheese. Repeat with remaining ingredients, saving extra olives and any feta crumbs as a garnish for the serving platter. To add some interest to my serving platter I cut a thick slice of watermelon and placed it on a platter as a decorative base. Stick each assembled watermelon, feta, and green olive appetizer on the watermelon base.
Store in the fridge for up to 2 hours if needed. Drizzle with balsamic vinegar just before serving and add a mint leaf at the top of each toothpick for that extra touch. It also tastes great as well!

I love the flavor combination of watermelon and feta, especially when topped with balsamic vinegar. I’ve never thought about adding olives, but I can see how it would give this tasty little treat a nice salty boost.
